WHere is an easy interpretation of a drink found on our latest menu. Designed as a large-volume pre-mixed that is packed full of tastes associated with festive period, making it ideal for hosting a celebration. Reserve the remaining syrup you can use for brunch beverages, sweets, or for another batch of bikinis.
Bikini
Makes enough for 10 guests
To make the Citrus Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Cocktail (makes 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Directions
For the Cordial: Put the listed ingredients into a saucepan, bring to a gentle boil, agitating until the sugar dissolves. Next, take off the stove allowing it to cool down entirely. Transfer into a clean bottle, cap it and store in the refrigerator, it will last for up to one month.
To make Batch Mix: Pour the specified liquid ingredients into a large bottle, let it rest for one hour, then strain , ideally through muslin, so it's completely strained.
For serving: Measure 85ml of your batch mix to a cocktail shaker filled with ice, and stir lightly for about 60 seconds to cool it down. Filter into an chilled martini glass or a similar vessel, decorate with a few cranberries and complete it with a brief mist of the essential oil over the drink.
